Everyone who has eaten leaves Stanimashki style at home, has liked them very much. This is the reason to present you this recipe.
For the tasty leaves you need the following ingredients: hale leaves of sauerkraut, 4 big onions, 500-600 gr. pork meat, salt and black pepper. Cut the meat in cubes approximately 3 to 3 cm and fry in hot oil and a little salt. Fry the meat well from all the sides till nice golden brown. When it’s ready, add the onion, cut in large pieces. Often stir until the onion becomes soft and well fried.
The only spice, which you have to add to these leaves are 10 grains of black pepper, crushed small, not ground. Take a sauerkraut leaf and put in the end one cube of the meat and add 1-2 soup spoons of the onion. Wrap once the meat as though you make a roll, and place on it the left and the right side inwards to the middle, them make a tight small roll till the end of the leaf. Like this you prepare all the sauerkraut leaves. It’s obligatory to bake these leaves in an earthenware pot. Cover the bottom of the pot with a little sauerkraut cut in small pieces, and several leaves, then arrange very closely each to other all the rolls. Cover them with some sauerkraut leaves not to burn during the baking. In this variant, you don’t need much water to cook them. That’s why you can make in proportion 1/1 water and sauerkraut juice, as the quantity of all the liquid must be 300 ml. and because the sauerkraut juice is quite salty, don’t add too much salt when you prepare in advance the meat and the onion. Close well the earthenware dish with its lid and put in a cold oven for about 3 hours, as the first one bake to 200 degrees and the next two hours – to 150 degrees. These leaves become extremely tender because of the long cooking over a slow fire.
